- 120-150g Chicken breast (No Skin)
- 30g Baby Kale
- 30g Rocket
- Palm Full of fresh basil
- 1 tsp Fresh Chopped Tarragon
- 150g Roasted Sweet Potato
- 2 tsp fresh Lime Juice
- 2 tsp Olive Oil
- Sea Salt to taste
Roast the chicken breast and the sweet potato.
Whilst these are cooking place the kale, rocket and tarragon in a salad bowl.
Just before the chicken and sweet potato are ready dress the salad.
Take the warm sweet potatoes out of the oven, dice the potato and add it to the salad.
Toss the salad and serve the chicken breast on top. Enjoy!
